Alera Restaurant Brings Latin America’s Top Chefs to Roatán for an Unforgettable Culinary Journey

Welcome to the Guest Chef Series at Kimpton Grand Roatán, an exclusive dining experience where Chef Guido Ojeda, our Executive Chef at Alera, partners with some of Latin America’s most celebrated culinary talents, recognized by The World’s 50 Best Restaurants and Bars.

Each evening features a 6- to 8-course tasting menu, highlighting a creative fusion of local Caribbean flavors and contemporary Latin American cuisine. Every dish is elevated with carefully curated wine and cocktail pairings, making each dinner a multisensory celebration of food, culture, and storytelling.

This series is hosted at Alera, our signature restaurant in the heart of Kimpton. Limited seating, tickets on sale, full pre-payment required.

Chef Pablo Diaz ethos and approach to the transformative power of gastronomy—not only through ingredients but also in terms of its impact on society, politics, people, and our environment—has been shaped by his educational and professional experiences around the world. From the Professional Chef course at INTECAP in Guatemala City and his first job alongside Chef Eduardo González at Q'iu to his time pursuing a degree in Gastronomy at La Escuela Culinaria del Sureste in Mérida, Yucatán, Mexico and working under Chef Benito Molina as head chef at his restaurant Manzanilla in Ensenada, Baja California, Mexico. Chef Diaz also spent time in Spain and Italy before returning to Guatemala and opening Mercado 24, where non-traditional Guatemalan cuisine gives full importance to the origin of every ingredient, with nothing served that isn’t fished, grown, or produced in Guatemala.

He has worked at several renowned establishments in Colombia, such as the Hotel Hilton Garden Inn and Noa Sushi & Robata ( best new restaurant in the Colombia Caribbean), and is currently the Bar Manager at Hotel The Charlee in Medellín.

How do I purchase tickets?

Pairings are available as an optional add-on, either during booking or at the restaurant on the day of the event.

Are children allowed?

This is an adults-only experience. However, children 6 years and older may attend with a full-price ticket.

Will the Guest Chef Series be available in 2026?

Yes! The series continues through December 2026, with new dates announced by the end of 2025.

Is there a dress code?

While there is no strict dress code, we recommend smart island casual attire for a comfortable and stylish evening.

Where is the event held?

All Guest Chef Series events are hosted at Alera Restaurant, located inside Kimpton Grand Roatán Resort & Spa.

Is this event for resort guests only?

This event is open to the public and with a maximum sitting of 90 guests per night.
