Javier Rodriguez

Javier Rodríguez, a chef from Santiago del Estero, has worked in prestigious restaurants across Singapore, Denmark, Australia, England, and Norway. At 30, he returned to Argentina to open El Papagayo, transforming Córdoba’s culinary scene with a fusion of gastronomy, design, and art. He later expanded his ventures with Standard69, Shiok Coffee Roasters, and Casa Papagayo.

Today, Javier balances his time between his restaurants and his passion for traveling, cooking as a guest chef in renowned hotels and restaurants worldwide. In 2024, he was honored by The Best Chef Awards as one of Argentina’s four “World Class” chefs.

Joshua Monaghan is a renowned bartender and a key figure in the hospitality industry in Mexico and worldwide. He has worked at iconic bars featured on the 50 Best list, such as Fifty Mils and Zapote Journey Bar. Joshua is also the organizer of Shaker Room Mexico and the founder of the Bajío Bartenders Community.

Pablo Bonilla is a Costa Rican chef who has spent over 10 years researching the traditional cuisine of his country, visiting indigenous communities through the Jirondai Project, and learning from their techniques and ingredients. He is currently the chef and owner of Sikwa, a restaurant whose menu is inspired by these communities, using local Central American ingredients in its culinary offerings.

Previously, he was the chef and owner of restaurants such as Francisca and Tomillo, both based on the same research approach. Additionally, he is a consultant for international hotel projects, a speaker for initiatives with the FAO, local governments, and the Basque Culinary Center, and has been invited as a guest chef in restaurants across America and Europe.
